Fresh Mint tea, tasty and good for Hay fever and Tummy cramps

On Sunday morning I did one of my favourite things and went for breakfast at Tom's Kitchen in Chelsea, with Jen, Sam and Nik.

After a delicious -not so healthy breakfast- of crisp belgian waffles, cinnamon cream and apples:)

 I ordered their fresh Mint Tea.

Boiling water with fresh mint leaves in the teapot

It was delicious and it definitely felt like it helped compensate on the health front for the waffles.

Peppermint Tea Recipe:
Ingredients:
4-5 stalks of fresh mint, with stems
4 cups boiling water
sugar or honey as desired

Directions:
1) Boil water
2) Preheat a tea pot with warm tap water whilst the kettle boils
3) Roll the mint between your palms until it is slightly crushed.
4) Empty the warm water from the tea pot, and place the mint leaves in the pot.
5) Pour the boiling water  into the tea pot over the mint leaves, and allow to simmer for 5 minutes.
6) Pour, add sugar or honey if preferred, and enjoy!
